These traditional Irish potato breads are a perfect complement to a hearty breakfast. Top with poached eggs and spinach. A great way to use leftover mashed potatoes.

Step preview

  1. Get a clean large saucepan
  2. Add peeled, diced potato
  3. Add salt
  4. Cover with water
  5. Heat until boiling
  6. Simmer for approx 10min until tender
  7. Drain well
  8. Mash with potato masher until smooth
  9. Retrieve large saucepan
  10. Add salted butter
  11. Add all purpose flour
  12. Add egg
  13. Season with ground black pepper
  14. Stir together until completely mixed
  15. Turn out on lightly-floured surface
  16. Divide into halves
  17. Roll out
  18. Cut into quarters
  19. Cook in frying pan on medium heat until golden brown
  20. Serve immediately
