    Method

  • 1. Add water, active dried yeast and sugar to a clean large mixing bowl
  • 2. Stir until dissolved
  • 3. Let rest until foamy - 5 min
  • 4. Add water, all purpose flour, olive oil and salt to the dough
  • 5. Mix until combined
  • 6. Turn out on lightly-floured surface
  • 7. Knead until elastic - approx 7 min
  • 8. Grease a clean large mixing bowl with olive oil
  • 9. Transfer dough to large mixing bowl
  • 10. Cover with plastic wrap
  • 11. Let rest large mixing bowl until doubled - 1 hr
  • 12. Grease a clean jelly roll pan lightly with olive oil
  • 13. Punch the dough down in a large mixing bowl
  • 14. Flatten the dough onto the jelly roll pan
  • 15. Cover with plastic wrap
  • 16. Let rest until doubled - 45 min
  • 17. Press an indentation
  • 18. Drizzle with olive oil
  • 19. Sprinkle with sea salt
  • 20. Cover with plastic wrap
  • 21. Let rest until doubled - 45 min
  • 22. Pre-heat oven - 230°C
  • 23. Bake until light golden - 18 min, 230°C, low rack
