  19. Get a clean jelly roll pan
  20. Grease with olive oil lightly
  21. Punch down large mixing bowl
  22. Flatten large mixing bowl onto bread
  23. Cover with plastic wrap
  24. Let rest until doubled - 45 min
  25. Press an indentation
  26. Drizzle with olive oil
  27. Sprinkle with sea salt
  28. Cover with plastic wrap
  29. Let rest until doubled - 45 min
  30. Pre-heat - 230°C
  31. Bake until light golden - 18 min, 230°C, low rack
