Method
1. Pre-heat oven - 170°C / 340°F
2. In a food processor, grind peanuts until fine
3. Add powdered sugar, peanut oil and coconut oil to the food processor bowl
4. Blend until dough forms
5. Roll the dough into balls
6. Transfer balls to 2 baking sheets and flatten slightly
7. Top each cookie with a whole peanut
8. Brush each cookie with the beaten egg yolk
9. Bake cookies until light golden - 15 min, 170°C / 340°F
10. Transfer onto cooling rack
