A bit of a middle-eastern vibe with spiced chicken (seasoned with cumin, sumac, garlic, cinnamon, coriander and a few other goodies), chilli-flecked couscous, hummus (I went for shop-bought on this one) and paprika-fried chickpeas. Lot’s of mouth-watering flavours – a buffet in a bowl!

Step preview

  1. Prep and set aside chicken breast: chopped
  2. Prep and set aside garlic clove: peeled & minced
  3. Prep and set aside canned chickpeas: drained & rinsed
  4. Prep and set aside pita bread: toasted & quartered
  5. Prep and set aside radish: finely sliced
  6. Prep and set aside cherry tomatoes: halved
  7. Get a clean large glass bowl
  8. Add prepared chicken breast
  9. Add black pepper
  10. Add salt
  11. Add ground cumin
  12. Add ground cinnamon
  13. Add ground coriander
  14. Add paprika
  15. Add lemon juice
  16. Add prepared garlic clove
  17. Add ground sumac
  18. Add olive oil
  19. Mix
  20. Cover with plastic wrap
  21. Chill in fridge for approx 1h
  22. Fry for 7min on high heat until golden brown
  23. Get a clean jug
  24. Add couscous
  25. Add chili flakes
  26. Add boiling water
  27. Add lemon zest
  28. Stir
  29. Cover with plastic wrap
  30. Soak for approx 5min
  31. Stir then fluff with a fork
  32. Get a clean frying pan
  33. Add olive oil
  34. Add prepared canned chickpeas
  35. Add ground cumin
  36. Add smoked paprika
  37. Fry for approx 5min on high heat until light golden
  38. Transfer couscous to 4 small bowls
  39. Add lettuce
  40. Add baby spinach
  41. Add raddichio
  42. Add prepared pita bread
  43. Transfer chickpeas to 4 salad
  44. Transfer chicken to 4 salad
  45. Garnish with green onion
  46. Add prepared radish
  47. Add prepared cherry tomatoes
  48. Add hummus
  49. Garnish with fresh parsley
