    METHOD


  • 1. Add sweet potato, bread flour, salt, sugar, active dried yeast and water to a clean large mixing bowl
  • 2. Mix then set aside
  • 3. Add unsalted butter to a clean small bowl
  • 4. Melt in microwave - low heat
  • 5. Transfer content of small bowl to dough
  • 6. Knead until elastic - 10 min, dough hook
  • 7. Grease a clean large mixing bowl
  • 8. Transfer dough to large mixing bowl and cover
  • 9. Let rise until doubled - 1 hr
  • 10. Grease a clean loaf pan
  • 11. Turn out large mixing bowl on lightly-floured surface
  • 12. Flatten
  • 13. Add light brown sugar and ground cinnamon to a clean small bowl and mix
  • 14. Sprinkle content of large mixing bowl with sugar mixture
  • 15. Roll large mixing bowl
  • 16. Transfer content of large mixing bowl to loaf pan and cover
  • 17. Let rise until doubled - 1 hr
  • 18. Pre-heat oven - 174°C
  • 19. Brush with unsalted butter
  • 20. Bake until golden brown - 35 min, 174°C
  • 21. Let cool
