Step preview

  1. Line 2 baking pans with parchment paper
  2. Get a clean large mixing bowl
  3. Add raw cane sugar
  4. Add dried yeast
  5. Add salt
  6. Add softened unsalted butter
  7. Mix together
  8. Add warm buttermilk
  9. Add all purpose flour
  10. Mix until combined
  11. Knead for 5min with dough hook until elastic and cover
  12. Let rise for 1h until springy to touch
  13. Turn out
  14. Shape
  15. Transfer dough to 2 baking pans
  16. Let rise for 30min
  17. Pre-heat
  18. Get a clean large saucepan
  19. Add baking soda
  20. Fill with water
  21. Heat until boiling
  22. Dip 2 rolls into boiling water
  23. Cut rolls
  24. Get a clean small bowl
  25. Add egg white
  26. Beat
  27. Brush egg whites with 2 baking pans
  28. Sprinkle with coarse sea salt
  29. Bake for 20min until golden brown
