Nuts, cranberries and oats taken to a whole new level with the addition of mini coconut macaroons. Serve with fresh fruit, yogurt, and honey - although it's perfectly sweet enough without the honey too. The macaroons make a great snack too, just toss together with dried cranberries and enjoy!

Step preview

  1. Prep and set aside coconut oil: melted
  2. Prep and set aside pecan pieces: chopped
  3. Prep and set aside walnuts: chopped
  4. Prep and set aside almonds: chopped
  5. Pre-heat
  6. Get a clean large mixing bowl
  7. Add rolled oats
  8. Add light brown sugar
  9. Add honey
  10. Add prepared coconut oil
  11. Add water
  12. Mix together until combined
  13. Transfer oat mixture to baking sheet
  14. Bake for 20min until golden brown
  15. Get a clean medium bowl
  16. Add unsweetened shredded coconut
  17. Add caster sugar
  18. Add all purpose flour
  19. Add egg white
  20. Mix together until well combined
  21. Scoop dough onto baking sheet
  22. Bake for 8min until golden brown
  23. Retrieve oat mixture
  24. Add prepared pecan pieces
  25. Add prepared walnuts
  26. Add prepared almonds
  27. Bake for 8min
  28. Let cool
  29. Transfer cookies to oat mixture
  30. Mix in dried cranberries
  31. Let cool completely
  32. Transfer oat mixture to jar
