  2. Get a clean saucepan
  3. Add pitted dates
  4. Add water
  5. Simmer for 5min
  6. Get a clean medium bowl
  7. Add maple syrup
  8. Add vanilla extract
  9. Transfer fruit to syrup
  10. Blend until smooth
  11. Retrieve a clean medium bowl
  12. Add egg yolk
  13. Add all purpose flour
  14. Add baking powder
  15. Add grated ginger
  16. Add zest of orange
  17. Add syrup to batter
  18. Mix until well combined
  19. Get a clean large mixing bowl
  20. Add egg white
  21. Whisk until stiff peaks form
  22. Fold egg whites into batter
  23. Grease 4 ramekins
  24. Add maple syrup
  25. Pour batter into 4 ramekins
  26. Wrap tightly with foil
  27. Place in water bath
  28. Bake for 1h
  29. Turn out
  30. Garnish with candied ginger
