These tuna patties are quick and easy to whip up and are loved by my whole family. If there are leftovers (which is rare), my 5 year old loves them in her lunchbox and I have taken them to work for lunch too. I like to serve them with homemade mayonnaise, cauliflower mash and either raw or cooked veggies. They would be great with a big salad too.

Step preview

  1. Prep and set aside canned tuna: drained
  2. Prep and set aside baby spinach: finely chopped
  3. Get a clean large mixing bowl
  4. Add egg
  5. Whisk lightly
  6. Add prepared canned tuna
  7. Add prepared baby spinach
  8. Add wholegrain mustard
  9. Add coconut flour
  10. Add onion granules
  11. Add garlic powder
  12. Add ground turmeric
  13. Add paprika
  14. Add salt & pepper
  15. Mix thoroughly until combined
  16. Form into rounds
  17. Chill in fridge for approx 1h until firm
  18. Line a plate with paper towels
  19. Heat a frying pan on medium heat
  20. Add coconut oil
  21. Fry patties until golden brown
  22. Transfer patties to plate
  23. Serve immediately
