I’m pretty sure, after making this bread about a million times, it’s impossible to mess it up. I’ve thrown in all sorts of spices, other grains, various amounts of flour, inaccurate amounts of water/yeast/salt: it always works. I would be shocked if you could mess this recipe up — assuming (as I probably shouldn’t) that you act within reason.

Step preview

  1. Prep and set aside water: warm
  2. Get a clean large mixing bowl
  3. Add bread flour
  4. Add quick-rise yeast
  5. Add salt
  6. Add prepared water
  7. Mix until dough forms
  8. Cover with plastic wrap for 18h and let rise
  9. Transfer content of large mixing bowl to lightly floured surface
  10. Fold into thirds
  11. Roll into a ball
  12. Dust with bread flour
  13. Cover with kitchen towel for approx 2h
  14. Pre-heat
  15. Pre-heat a Dutch oven
  16. Transfer dough to Dutch oven and cover
  17. Bake for 15min and remove lid
  18. Bake for 15min until golden brown
  19. Let cool for approx 30min
