These are dense, chocolatey, and more cake-like than any flourless dessert I’ve ever made. They were fabulous! Throw on some frosting, and you have a pretty darn delicious dessert. If you’re dairy free too, just substitute your butter replacement and it should work just fine!

Step preview

  1. Prep and set aside unsalted butter: cubed
  2. Prep and set aside egg: beaten
  3. Pre-heat
  4. Get a clean large mixing bowl
  5. Add semisweet chocolate
  6. Add prepared unsalted butter
  7. Heat in microwave until completely melted
  8. Whisk together until blended
  9. Add brown sugar
  10. Add salt
  11. Add prepared egg
  12. Whisk in until smooth
  13. Add sifted cocoa powder
  14. Add sifted coffee powder
  15. Mix until combined
  16. Prepare a mini muffin pan with paper muffin cups
  17. Transfer content of large mixing bowl to mini muffin pan
  18. Bake for 15min until just set
  19. Transfer onto cooling rack until completely cool
  20. Get a clean stand mixer bowl
  21. Add cream cheese
  22. Add unsalted butter
  23. Mix until light and fluffy
  24. Add cocoa powder
  25. Add powdered sugar
  26. Add vanilla extract
  27. Mix until smooth
  28. Frost with piping bag
