    Method

  • 1. Pre-heat oven - 190°C
  • 2. Add semisweet chocolate and unsalted butter to a clean large mixing bowl
  • 3. Heat in microwave until completely melted
  • 4. Whisk together until blended
  • 5. Add brown sugar, salt and egg and whisk in until smooth
  • 6. Add cocoa powder and coffee powder and mix until combined
  • 7. Prepare a clean mini muffin pan with paper muffin cups
  • 8. Transfer content of large mixing bowl to mini muffin pan
  • 9. Bake until just set - 15 min, 190°C
  • 10. Transfer onto cooling rack until completely cool
  • 11. Add cream cheese and unsalted butter to a clean stand mixer bowl
  • 12. Mix until light and fluffy
  • 13. Add cocoa powder, powdered sugar and vanilla extract
  • 14. Mix until smooth
  • 15. Frost with piping bag
