Step preview

  1. Get a clean saucepan
  2. Add egg
  3. Add granulated sugar
  4. Whisk briefly until combined
  5. Add heavy cream
  6. Add juice of, zest of lemon
  7. Mix until combined
  8. Heat slowly on medium heat until thick
  9. Transfer content of saucepan to medium bowl
  10. Chill in fridge for approx 3h
  11. Pre-heat
  12. Roll out sweet shortcrust pastry onto a lightly floured surface
  13. Line a tart pan
  14. Fill with pie weights
  15. Pre-bake for 18min until lightly browned
  16. Let cool for 15min
  17. Pour filling into tart pan
  18. Bake for 15min until set
  19. Let cool
