Step preview

  1. Pre-heat - 175°C
  2. Line a clean baking sheet with parchment paper
  3. Get a clean large mixing bowl
  4. Add granulated sugar
  5. Add egg
  6. Beat until pale and light then set aside - approx 5 min
  7. Get a clean medium bowl
  8. Add all purpose flour
  9. Add baking powder
  10. Add salt
  11. Add ground cardamom
  12. Whisk briefly
  13. Transfer dry ingredients to dough
  14. Add vanilla extract
  15. Mix together until well combined
  16. Add chopped dark chocolate
  17. Add chopped blanched almonds
  18. Add chopped dried apricots
  19. Mix briefly until combined
  20. Turn out on lightly-floured surface
  21. Shape
  22. Transfer dough to baking sheet
  23. Bake until firm - 20 min, 175°C
  24. Reduce - 160°C
  25. Let cool - 15 min
  26. Slice
  27. Arrange
  28. Bake - 15 min, 160°C
  29. Let cool onto cooling rack
