These crepes are wonderful for brunches on the weekend with friends. You can make them a day ahead and wrap with plastic wrap and warm before filling the next day. They are particularly delicious with duck confit and pickled onions with a poached egg, bechamel, scrambled eggs and pancetta, or with cheese and veggies.

Step preview

  1. Get a clean saucepan
  2. Add butter
  3. Cook on medium heat until lightly browned and let cool
  4. Get a clean blender jug
  5. Add beer
  6. Add all purpose flour
  7. Add seasoned salt
  8. Add egg
  9. Transfer two thirds of content of saucepan to blender jug
  10. Blend until completely mixed
  11. Refrigerate in fridge for approx 1h
  12. Transfer the rest of content of saucepan to frying pan
  13. Heat on medium heat
  14. Pour content of blender jug into frying pan bit by bit
  15. Cook for approx 30s until just set
  16. Flip
  17. Cook for approx 30s until golden brown
  18. Serve
