Juicy pineapple, tomatoes and peach given a kick up the backside with a good squirt of lime juice and some serious jalapeno heat. I served it with some spicy rice and salmon and it worked great. So much more interesting than adding a salad on the side of dinner. Full of flavor, but healthy too.

  3. Prep and set aside jalapeño pepper: finely sliced
  4. Prep and set aside cherry tomatoes: quartered
  5. Prep and set aside lime: juice of
  6. Prep and set aside cilantro: coarsely chopped
  7. Get a clean medium bowl
  8. Add prepared peach
  9. Add prepared pineapple
  10. Add prepared jalapeño pepper
  11. Add prepared cherry tomatoes
  12. Add prepared lime
  13. Add salt
  14. Mix together
  15. Cover with plastic wrap then set aside
  16. Garnish with prepared cilantro
