  1. Prep and set aside fresh chili: coarsely chopped
  2. Prep and set aside garlic clove: peeled & chopped
  3. Prep and set aside lemongrass stalk: peeled & coarsely chopped
  4. Prep and set aside ginger: peeled & chopped
  5. Prep and set aside cilantro: destalked
  6. Get a clean food processor bowl
  7. Add prepared fresh chili
  8. Add prepared garlic clove
  9. Add prepared lemongrass stalk
  10. Add fish sauce
  11. Add brown sugar
  12. Add salt
  13. Add scallion
  14. Add prepared ginger
  15. Pulse until well combined
  16. Add salmon filet
  17. Pulse briefly until just combined
  18. Add prepared cilantro
  19. Add kaffir lime leaves
  20. Pulse until combined
  21. Form into balls
  22. Chill in fridge for approx 30min until firm
  23. Assemble
  24. Grill
