1. Prep and set aside mixed berries: coarsely chopped 2. Pre-heat 3. Line a muffin pan with paper muffin cups 4. Get a clean small bowl 5. Add prepared mixed berries 6. Add gluten-free flour 7. Stir gently then set aside 8. Get a clean large mixing bowl 9. Add golden caster sugar 10. Add egg 11. Add vegetable oil 12. Add vanilla extract 13. Mix until combined 14. Add plain yogurt 15. Mix until combined 16. Add coconut flour 17. Add gluten-free flour 18. Add baking soda 19. Fold gently until combined 20. Transfer fruit to batter 21. Fold gently until just combined 22. Spoon batter into muffin pan 23. Bake for 18min until skewer tests clean 24. Let cool for approx 5min 25. Transfer to cooling rack until completely cool 26. Get a clean glass measuring cup 27. Add powdered sugar 28. Whisk briefly 29. Add vanilla extract 30. Add double cream gradually while mixing 31. Frost muffins 32. Sprinkle with chia seeds
