These easy chai-spiced meringues are light and delicate, the perfect balance of crispy on the outside and chewy on the inside. Try serving with baked apple slices. (Gluten-Free)

    Method

  • 1. Pre-heat oven - 120°C / 250°F
  • 2. Line 2 clean baking sheets with parchment paper
  • 3. Add egg white to a clean large mixing bowl
  • 4. Whisk until stiff peaks form
  • 5. Mix superfine sugar into meringue bit by bit
  • 6. Add powdered sugar, ground cinnamon, ground cardamom and ground cloves to a clean medium bowl and whisk to combine
  • 7. Mix sugar mixture into meringue bit by bit until combined
  • 8. Scoop meringues onto 2 baking sheets using 2 dessert spoons
  • 9. Bake until hollow-sounding when tapped - 40 min, 120°C
