Method
1. Pre-heat oven - 120°C / 250°F
2. Line 2 clean baking sheets with parchment paper
3. Add egg white to a clean large mixing bowl
4. Whisk until stiff peaks form
5. Mix superfine sugar into meringue bit by bit
6. Add powdered sugar, ground cinnamon, ground cardamom and ground cloves to a clean medium bowl and whisk to combine
7. Mix sugar mixture into meringue bit by bit until combined
8. Scoop meringues onto 2 baking sheets using 2 dessert spoons
9. Bake until hollow-sounding when tapped - 40 min, 120°C
