It’s so easy to make your own ice cream at home – no special equipment needed for this zesty shortbread version!

  • Biscuits icon
    Biscuits4crumbled
  • Sweetened condensed milk icon
    Sweetened condensed milk240 ml
  • Vanilla extract icon
    Vanilla extract1 teaspoon
  • Double cream icon
    Double cream600 ml
  • Lemon curd icon
    Lemon curd120 ml
    Method

  • 1. Add sweetened condensed milk, vanilla extract and double cream to a clean large mixing bowl
  • 2. Whisk until thick
  • 3. Prepare a clean loaf pan
  • 4. Spoon the two thirds into large blobs, top with lemon curd and swirl around
  • 5. Add remaining cream mixture, top with lemon curd and make swirls on top
  • 6. Sprinkle with biscuits
  • 7. Freeze - approx 3 hr
