Method
1. Add all purpose flour, granulated sugar, cocoa powder, ground cinnamon and salt to a clean large mixing bowl
2. Whisk briefly
3. Add unsalted butter to the large mixing bowl
4. Rub in until coarse crumbs form
5. Add egg to the large mixing bowl
6. Mix briefly until dough forms
7. Wrap with plastic wrap
8. Chill in fridge - 1 hr
9. Pre-heat oven - 175°C
10. Line 2 clean baking sheets with parchment paper
11. Roll out large mixing bowl on lightly-floured surface
12. Cut out
13. Transfer content of large mixing bowl to 2 baking sheets
14. Bake - 8 min, 175°C
15. Let cool
16. Assemble jam with the cookies
