These cocoa cookies are great for cutting into festive shapes. We've sandwiched them with apricot jam here, but they're also delicious on their own, or dipped in melted chocolate.

  1. Get a clean large mixing bowl
  2. Add all purpose flour
  3. Add granulated sugar
  4. Add cocoa powder
  5. Add ground cinnamon
  6. Add salt
  7. Whisk briefly
  8. Add cold unsalted butter
  9. Rub in until coarse crumbs form
  10. Add egg
  11. Mix briefly until dough forms
  12. Wrap with plastic wrap
  13. Chill in fridge for 1h
  14. Pre-heat
  15. Line 2 baking sheets with parchment paper
  16. Roll out large mixing bowl on lightly-floured surface
  17. Cut out
  18. Transfer content of large mixing bowl to 2 baking sheets
  19. Bake for 8min
  20. Let cool
  21. Assemble jam
