  4. Roast for 50min until soft
  5. Set aside
  6. Get a clean large cast iron skillet
  7. Add olive oil
  8. Heat on medium heat
  9. Add spinach
  10. Add nutmeg
  11. Add salt & pepper
  12. Cook until softened and continue
  13. Get a clean large mixing bowl
  14. Add egg
  15. Whisk
  16. Retrieve large cast iron skillet
  17. Add crumbled feta cheese
  18. Add grated cheddar cheese
  19. Scoop content of baking sheet onto large cast iron skillet
  20. Transfer content of large mixing bowl to large cast iron skillet
  21. Top with crumbled feta cheese
  22. Top with grated cheddar cheese
  23. Bake for 15min until light golden
  24. Serve immediately
