This is a protein-packed dish - great value and full of goodness. Serve hot, or makes a great cold lunch with salad and cured meat.

    Method

  • 1. Pre-heat oven - 190°C
  • 2. Add sweet potato to a clean baking sheet
  • 3. Roast until soft - 50 min, 190°C, then set aside
  • 4. Add olive oil to a clean large cast iron skillet
  • 5. Heat over medium heat
  • 6. Add spinach, nutmeg and salt & pepper
  • 7. Cook until softened and continue
  • 8. Whisk eggs in a clean large mixing bowl
  • 9. Add feta cheese and cheddar cheese to the large cast iron skillet
  • 10. Scoop sweet potatoes onto skillet
  • 11. Transfer eggs to large cast iron skillet
  • 12. Top with feta cheese and cheddar cheese
  • 13. Bake until light golden - 15 min, 190°C
  • 14. Serve immediately
