    METHOD


  • 1. Add dried yeast, granulated sugar and milk to a clean large mixing bowl
  • 2. Mix until dissolved
  • 3. Add all purpose flour to the batter
  • 4. Mix until combined
  • 5. Let rest - 10 min
  • 6. Add all purpose flour, buckwheat flour and salt to a clean medium bowl
  • 7. Whisk briefly then set aside
  • 8. Replace batter on drop
  • 9. Add milk to the batter
  • 10. Transfer dry ingredients to batter gradually while mixing
  • 11. Whisk until smooth
  • 12. Add unsalted butter to a clean small glass bowl
  • 13. Melt in microwave - low heat
  • 14. Transfer content of small glass bowl to batter
  • 15. Whisk until well combined and cover
  • 16. Let rise until doubled - approx 2 hr
  • 17. Stir
  • 18. Add egg yolk to the batter and mix
  • 19. Add egg white to a clean medium bowl
  • 20. Whisk until stiff peaks form
  • 21. Fold egg whites into batter gently
  • 22. Heat unsalted butter to the batter
  • 23. Fry until golden brown - approx 2 min
  • 24. Serve immediately
