These nutty cookies are made with rye flour for a lovely sandy crumb. The thumbprint gives the cookies an even thickness throughout while baking, and makes a little pool for filling with your favorite fruity jam.

Step preview

  1. Get a clean medium bowl
  2. Add toasted pecan pieces
  3. Add rye flour
  4. Add granulated sugar
  5. Add sea salt
  6. Blitz thoroughly until fine
  7. Rub in cubed unsalted butter
  8. Turn out dough onto lightly floured surface
  9. Form into balls
  10. Transfer dough balls to baking sheet
  11. Press gently
  12. Chill in fridge for approx 30min
  13. Pre-heat
  14. Line with parchment paper
  15. Bake for 12min
  16. Let cool completely
  17. Fill with jam
