This salad has everything! It takes a bit of time to put together, but it makes an awesome lunch or dinner... and stellar leftovers.

    Method

  • 1. Pre-heat oven - 180°C / 355°F
  • 2. Add orange juice, soy sauce, sesame oil, olive oil, ginger, garlic clove, maple syrup and cayenne pepper to a clean small bowl
  • 3. Mix until blended then set aside
  • 4. Add tofu to a clean baking pan and pour the sauce over the tofu cubes
  • 5. Bake - 15 min, 180°C / 355°F
  • 6. Stir gently and bake until browned - 15 min, 180°C / 355°F
  • 7. Transfer tofu to plate and reserve liquid
  • 8. In a small bowl combine the marinade, lime, orange juice, rice vinegar and sea salt
  • 9. Cook soba noodles in a clean large saucepan then set aside
  • 10. Add broccoli and water to the large saucepan
  • 11. Simmer and strain - 30 sec
  • 12. Rinse until cool
  • 13. Add carrot, white cabbage, kale, cilantro, fresh basil leaves and sesame seeds to a clean large mixing bowl
  • 14. Cover with soba noodles
  • 15. Add broccoli
  • 16. Pour marinade into salad and mix
  • 17. Top with the gorgeous baked tofu
