Method
1. Add active dried yeast, granulated sugar and water to a clean small bowl and whisk briefly until combined
2. Add egg and buttermilk to the yeast mixture and mix until combined
3. Add all purpose flour and sea salt to a clean medium bowl and mix briefly until combined
4. Pour in the yeast mixture
5. Mix until combined
6. Add unsalted butter
7. Mix with stand mixer until dough forms
8. Prepare dough hook and knead until elastic - 10 min
9. Place the kneaded dough into the greased bowl
10. Let rise until doubled - 1 hr
11. Heat unsalted butter to a clean large cast iron skillet
12. Add onion and thyme
13. Cook - 30 min, low heat
14. Add nutmeg to the onions and mix
15. Grease a clean round pan
16. Punch down dough and turn out dough on lightly-floured surface
17. Rough the dough out into a rectangle
18. Melt unsalted butter in microwave - low heat
19. Brush with melted butter and spread the onion out onto the rolled dough
20. Season with salt & pepper
21. Roll
22. Cut into slices
23. Arrange dough in round pan
24. Brush the rolls with butter using a pastry brush
25. Let rise until doubled - 30 min
26. Pre-heat oven - 190°C
27. Bake until golden brown - 30 min, 190°C
28. Let cool
