Step preview

  1. Get a clean small bowl
  2. Add active dried yeast
  3. Add granulated sugar
  4. Add warm water
  5. Whisk briefly until combined
  6. Add egg
  7. Add buttermilk
  8. Mix until combined
  9. Get a clean medium bowl
  10. Add all purpose flour
  11. Add sea salt
  12. Mix briefly until combined
  13. Transfer yeast mixture to dough
  14. Mix until combined
  15. Add softened unsalted butter
  16. Mix until dough forms
  17. Knead until elastic - 10 min, dough hook
  18. Grease a clean large mixing bowl
  19. Transfer dough and cover
  20. Let rise large mixing bowl until doubled - 1 hr
  21. Get a clean medium bowl
  22. Add sliced red onion
  23. Add fresh thyme
  24. Get a clean large cast iron skillet
  25. Add unsalted butter
  26. Heat
  27. Transfer onion mixture to onions
  28. Cook - 30 min, low heat
  29. Add finely grated nutmeg and mix
  30. Grease a clean round pan
  31. Punch down dough
  32. Turn out on lightly-floured surface
  33. Roll out
  34. Get a clean small bowl
  35. Add unsalted butter
  36. Melt in microwave - low heat
  37. Brush butter with dough
  38. Spread medium bowl with dough
  39. Season with salt & pepper
  40. Roll
  41. Cut
  42. Arrange dough in round pan
  43. Brush small bowl with rolls and cover
  44. Let rise until doubled - 30 min
  45. Pre-heat - 190°C
  46. Bake until golden brown - 30 min, 190°C
  47. Let cool
