Method
1. Heat the pecans on low heat to toast
2. Chop the pecans finely then set aside
3. Add cookie crumbs, dark brown sugar, chopped pecans and sea salt to a clean medium bowl
4. Mix until combined
5. Add maple syrup, vanilla extract and bourbon
6. Stir thoroughly until well combined
7. With damp hands, shape the mixture into 1" diameter balls
8. Place truffles on a lined freezer-proof dish or tray
9. Chill in freezer - 2 hr
10. Melt chocolate in the microwave
11. Coat truffles with melted chocolate
12. Transfer onto cooling rack
13. Add pecan pieces or coarse sea salt on top to decorate
14. Chill in fridge until set
