These little 2 bite delights are a hybrid of a molten chocolate cake and a cookie. The creamy, salty centers beg for a glass of milk. I first made a version of these when I was at Wolfgang Puck and it quickly turned into one of my favorites.

Step preview

  1. Get a clean small bowl
  2. Add hazelnut flour
  3. Add salt then set aside
  4. Get a clean heatproof bowl
  5. Add dark chocolate
  6. Melt slowly in microwave while stirring occasionally
  7. Stir until smooth
  8. Add room temperature, sliced butter
  9. Mix until glossy
  10. Get a clean stand mixer bowl
  11. Add sugar
  12. Add room temperature egg
  13. Mix for 2min with whisk attachment
  14. Transfer chocolate mixture to dough
  15. Mix for 2min on medium speed
  16. Prepare with paddle attachment
  17. Transfer nuts to dough
  18. Mix for 30s on low speed until combined
  19. Cover with plastic wrap
  20. Chill in fridge for approx 4h
  21. Pre-heat
  22. Line a baking sheet with parchment paper
  23. Get a clean small bowl
  24. Add sugar
  25. Form dough into balls
  26. Roll dough in sugar mixture one by one
  27. Transfer dough to baking sheet
  28. Bake for 7min
  29. Let cool for approx 5min
  30. Serve
