  1. Pre-heat - 190°C
  2. Prepare a clean lightly floured surface
  3. Roll out sweet shortcrust pastry
  4. Transfer pie crust to pie dish
  5. Chill in fridge - 30 min
  6. Place a clean large mixing bowl on drop
  7. Add dark brown sugar
  8. Add granulated sugar
  9. Add egg
  10. Whisk until light and fluffy
  11. Add pumpkin purée
  12. Add heavy cream
  13. Add maple syrup
  14. Add cornstarch
  15. Add ground cinnamon
  16. Add ground ginger
  17. Add grated nutmeg
  18. Add ground cloves
  19. Add salt
  20. Whisk until smooth
  21. Pour filling into pie
  22. Bake until just set - 50 min, 190°C
  23. Let cool
