This is by far my favorite of any brittles! It's smoky, sweet, and salty. Perfect as a garnish on apple desserts, or eaten on its own as a special savory and sweet treat.

Step preview

  1. Pre-heat
  2. Prepare a baking sheet with parchment paper
  3. Add bacon
  4. Bake for 15min until crispy
  5. Let cool on round wire rack
  6. Chop well
  7. Get a clean saucepan
  8. Add butter
  9. Add sugar
  10. Add corn syrup
  11. Add salt
  12. Cook on high heat until light golden while stirring occasionally
  13. Stir continuously until boiling
  14. Mix in baking soda and turn off heat
  15. Stir until frothy
  16. Add toasted walnuts
  17. Transfer meat to mixture
  18. Mix in until combined
  19. Transfer onto silicone baking mat
  20. Cover with parchment paper
  21. Roll out evenly and let cool
  22. Break into pieces
