This is by far my favorite of any brittles! It's smoky, sweet, and salty. Perfect as a garnish on apple desserts, or eaten on its own as a special savory and sweet treat.

  • Bacon icon

    Method

  • 1. Pre-heat oven - 210°C / 410°F
  • 2. Prepare a clean baking sheet with parchment paper
  • 3. Add bacon to the baking sheet
  • 4. Bake until crispy - 15 min, 210°C / 410°F
  • 5. Let cool on round wire rack
  • 6. Chop cooled bacon into very small pieces
  • 7. Add butter, sugar, corn syrup and salt to a clean saucepan
  • 8. Cook until light golden while stirring occasionally - high heat
  • 9. Stir continuously until boiling
  • 10. Mix in baking soda to the mixture and turn off heat
  • 11. Stir until frothy
  • 12. Add walnuts and bacon and mix until combined
  • 13. Scoop out in one lump onto a baking mat or greaseproof parchment paper
  • 14. Cover with parchment paper
  • 15. Flatten the bacon brittle with a rolling pin until smooth. Let harden
  • 16. Break into pieces and store in an airtight container
