    Method

  • 1. Pre-heat oven - 200°C / 395°F
  • 2. Grease and flour a clean muffin pan
  • 3. Add all purpose flour, baking powder and salt to a clean large mixing bowl
  • 4. Mix briefly until combined
  • 5. Add apple, pecan halves and blue cheese
  • 6. Mix briefly until combined
  • 7. Whisk together egg, greek yogurt, milk and sunflower oil in a clean large mixing bowl
  • 8. Mix together dry and wet ingredients gently until just combined
  • 9. Transfer batter to muffin pan
  • 10. Bake until golden brown - 25 min, 200°C / 395°F
  • 11. Transfer onto cooling rack
