In the coming weeks, the “holiday season” will come into full swing. A whole slew of holidays – both religious-based and not – will begin and be celebrated. One of the more prominent holidays celebrated here in the US during this time is Hanukkah. In just four days, the Jewish holiday will kick off and begin a celebration of eight days and nights for Jewish families. And in terms of food, that almost certainly means that there will be latkes aplenty. Serve with applesauce, sour cream, or Greek yogurt.

Step preview

  1. Get a clean large mixing bowl
  2. Grate potato
  3. Grate onion
  4. Add water
  5. Soak for approx 10min
  6. Drain and reserve liquid
  7. Get a clean small bowl
  8. Add beaten egg
  9. Add finely chopped dill
  10. Add finely chopped fresh thyme
  11. Add kosher salt
  12. Transfer egg mixture to mixture
  13. Add panko breadcrumbs
  14. Mix in
  15. Form into rounds
  16. Prepare a large cast iron skillet
  17. Add olive oil
  18. Heat on high heat
  19. Place mixture on large cast iron skillet
  20. Cook each side for approx 3min on high heat until golden brown
  21. Prepare a plate with paper towels
  22. Transfer content of large cast iron skillet to plate
  23. Serve
