Known as the Breton Galette, this buckwheat crêpe is the dessert crêpe's lesser-known cousin. Fill with various savory ingredients; ham and cheese are always a solid choice!
Ingredients
Unsalted butter50 g
All purpose flour95 g
Buckwheat flour65 g
Salt¼ teaspoon
Granulated sugar10 g
Egg150 gbeaten
Milk470 g
Method
1. Add unsalted butter to a clean small glass bowl
2. Heat until melted then set aside - low heat
3. Add all purpose flour, buckwheat flour, salt and granulated sugar to a clean large mixing bowl
4. Combine the dry ingredients together
5. Incorporate the eggs
6. Add melted butter and milk, whisk until combined
7. Strain any lumps to get a smooth batter
8. Chill in fridge - approx 30 min
9. Fry - approx 3 min
10. Flip - approx 1 min
