Known as the Breton Galette, this buckwheat crêpe is the dessert crêpe's lesser-known cousin. Fill with various savory ingredients; ham and cheese are always a solid choice!

  • Unsalted butter icon

    50 g (about 3 ½ tablespoons)

    95 g (about ¾ cup)

    10 g (about 2 ⅜ teaspoons)

    150 g (about 3)beaten

    470 g (about 2 cups)

    METHOD


  • 1. Add unsalted butter to a clean small glass bowl
  • 2. Heat until melted then set aside - low heat
  • 3. Add all purpose flour, buckwheat flour, salt and granulated sugar to a clean large mixing bowl
  • 4. Whisk briefly until blended
  • 5. Add egg to the batter
  • 6. Whisk until combined
  • 7. Transfer content of small glass bowl to batter
  • 8. Add milk to the batter
  • 9. Whisk until combined
  • 10. Strain with sieve
  • 11. Chill in fridge - approx 30 min
  • 12. Fry - approx 3 min
  • 13. Flip - approx 1 min
