  • Cooked ham icon
    Cooked ham680 gbone in, cured, smoked
  • Water icon

  • Maple sugar icon
    Maple sugar145 g
  • Wholegrain mustard icon
    Wholegrain mustard2 tablespoons
  • Apple cider vinegar icon
    Apple cider vinegar2 tablespoons
  • Pomegranate juice icon
    Pomegranate juice180 ml
    Method

  • 1. Pre-heat oven - 160°C
  • 2. Place ham on rack in a roasting pan
  • 3. Score
  • 4. Add enough water to come up about 1/2-inch up the sides of the pan
  • 5. Cover with foil
  • 6. Bake, covered, for 2 hours or until internal temperature reaches 100F to 110F, adding more water if needed
  • 7. Add maple sugar, wholegrain mustard, apple cider vinegar and pomegranate juice to a clean saucepan
  • 8. Heat until just boiling then reduce heat
  • 9. Cook, stirring occasionally, for 6 to 8 minutes or until slightly thickened and syrupy
  • 10. Uncover meat
  • 11. Pre-heat oven - 190°C
  • 12. Bake - 40 min, 190°C
  • 13. Baste every 10 minutes
  • 14. Cover with foil
  • 15. Let rest - approx 20 min
  • 16. Slice with chef's knife
  • 17. Serve immediately
