Now, I’m not a fan of ‘sneaking’ vegetables into food, but if I’m gonna eat a brownie, it might as well have vegetables in it. After baking, I put some in the freezer and they turned into a fudge bar type of thing. Red velvet colored or not, there are few things better than an ice cold fudge bar? And if you slather a bit of peanut butter onto these you will not regret it. Do it.

Step preview

  1. Get a clean saucepan
  2. Add chopped fresh beet
  3. Steam for approx 15min until tender
  4. Pre-heat
  5. Get a clean food processor bowl
  6. Add drained canned black beans
  7. Add egg
  8. Add coconut oil
  9. Transfer vegetables to batter
  10. Blitz until smooth
  11. Add cocoa powder
  12. Add brown sugar
  13. Add baking powder
  14. Add vanilla extract
  15. Add salt
  16. Blitz until combined
  17. Mix in dark chocolate chips
  18. Grease a muffin pan
  19. Transfer batter to muffin pan
  20. Bake for 30min
  21. Transfer carefully onto cooling rack and let cool
  22. Serve
