Pickled red onion is a staple in my refrigerator. I most frequently use it on tacos, carnitas, salads and as a garnish on vegetable side dishes. It adds the perfect amount of acid to liven up any dish and a great pop of color.

Step preview

  1. Get a clean saucepan
  2. Add red wine vinegar
  3. Add granulated sugar
  4. Add salt
  5. Cook on high heat until just boiling then set aside
  6. Get a clean jar
  7. Add quartered, finely chopped red onion
  8. Transfer dressing to jar
  9. Marinate in fridge for approx 8h
  10. Serve
