Despite being a vegetarian chili, you won’t miss the meat here. The accompaniments are what make this chili that much better, so definitely go with the sprinkling of scallions, cilantro, and a few avocado slices. The juxtaposition of the warm chili and the cold sour cream is also lovely, so don’t skip out on that. If you’re a bit apprehensive about heat, leave out the cayenne pepper and halve the amount of chili powder called for in the recipe. Another route is to use 2 tablespoons of chipotle chili powder instead of the regular chili powder. About 3 tablespoons of your favorite smoky Mexican chipotle seasoning would also work as a great alternative to the cumin, cayenne pepper, and chili powder called for in the recipe.

Step preview

  1. Get a clean large saucepan
  2. Add olive oil
  3. Heat on medium heat
  4. Add chopped onion
  5. Add coarsely chopped red bell pepper
  6. Add chopped garlic clove
  7. Sauté for approx 10min until softened
  8. Add chili powder
  9. Add dried oregano
  10. Add ground cumin
  11. Add cayenne pepper
  12. Stir for approx 2min
  13. Add canned black beans
  14. Add tomato sauce
  15. Cook until just boiling then reduce heat
  16. Simmer for 15min on low heat until thickened
  17. Serve
  18. Garnish with cilantro
  19. Garnish with sour cream
