This cake reminds me of an Indian-spiced Tortilla Española. The cauliflower works excellently in here. You’ll not want to leave out the sesame seeds and nigella seeds. Parmesan cheese works beautifully here, though a half-and-half mixture of parmesan and gruyere would also work wonderfully. If you haven’t a spring form pan, feel free to use a regular round cake pan, simply use a large enough piece of baking parchment that hangs quite a bit over the side– this will make pan removal quite easy. Another alternative would be to use a square cake pan; it’s the same principle… Just leave enough overhang.

Step preview

  1. Pre-heat
  2. Get a clean large saucepan
  3. Add broken up cauliflower
  4. Fill with water until covered and bring to a boil
  5. Simmer for 15min
  6. Drain then set aside
  7. Get a clean saucepan
  8. Add red onion
  9. Add olive oil
  10. Add finely chopped fresh rosemary
  11. Cook for 10min on medium heat until soft and let cool
  12. Transfer onions to large mixing bowl
  13. Add egg
  14. Add chopped fresh basil
  15. Whisk well
  16. Add sifted all purpose flour
  17. Add baking powder
  18. Add ground turmeric
  19. Add coarsely grated parmesan cheese
  20. Add salt & pepper
  21. Whisk until smooth
  22. Transfer vegetables to batter
  23. Mix in gently
  24. Prepare a springform pan with parchment paper
  25. Brush with melted unsalted butter
  26. Sprinkle with sesame seeds
  27. Sprinkle with nigella seeds
  28. Toss until coated
  29. Transfer batter to springform pan
  30. Spread evenly
  31. Bake for 45min until golden brown
  32. Let rest for approx 20min until just set
  33. Serve
