This recipe comes together in no time. It’s light and simple. Go for a nice extra virgin olive oil if you haven’t any walnut oil. The meyer lemon is a nice addition, but if you haven’t one on hand – a good ol’ fashioned lemon will work in a jiffy. Feta would work nicely here, and if you're not into that or goat cheese, farmer cheese would work well here too.

  1. Get a clean large saucepan
  2. Add water
  3. Add salt
  4. Boil
  5. Add quinoa
  6. Cover then reduce heat
  7. Simmer for 10min
  8. Add chopped kale
  9. Cover then reduce heat
  10. Simmer for 5min and turn off heat
  11. Let rest for 5min
  12. Get a clean large mixing bowl
  13. Add juice of lemon
  14. Add zest of lemon
  15. Add minced scallion
  16. Add toasted pine nuts
  17. Add crumbled hard goat cheese
  18. Add toasted walnut oil
  19. Combine
  20. Transfer vegetables to dressing
  21. Toss until combined
  22. Add salt & pepper
  23. Add juice of lemon
  24. Serve
