  • Kale icon

  • Pine nuts icon
    Pine nuts3 tablespoonstoasted
  • Hard goat cheese icon
    Hard goat cheese40 gcrumbled
  • Walnut oil icon

    Method

  • 1. Add water and salt to a clean large saucepan and bring to boil
  • 2. Add quinoa
  • 3. Cover, reduce heat and simmer - 10 min
  • 4. Add kale
  • 5. Cover then reduce heat
  • 6. Simmer and turn off heat - 5 min
  • 7. Let rest - 5 min
  • 8. Add lemon, lemon, scallion, pine nuts, hard goat cheese and walnut oil to a clean large mixing bowl
  • 9. Combine
  • 10. Transfer vegetables to dressing
  • 11. Toss until combined
  • 12. Add salt & pepper and lemon to the dressing
  • 13. Serve
