    1 (about 170 g)chopped

  • Scallion icon

    2 (about 30 g)minced

  • Pine nuts icon

    3 tablespoons (about 25.65 g)toasted

  • Hard goat cheese icon

    ¼ cup (about 60 g)crumbled

  • Walnut oil icon

    1 tablespoon (about 13.8 g)toasted

    METHOD


  • 1. Add water and salt to a clean large saucepan
  • 2. Boil
  • 3. Add quinoa to the large saucepan
  • 4. Cover then reduce heat
  • 5. Simmer - 10 min
  • 6. Add kale to the large saucepan
  • 7. Cover then reduce heat
  • 8. Simmer and turn off heat - 5 min
  • 9. Let rest - 5 min
  • 10. Add lemon, lemon, scallion, pine nuts, hard goat cheese and walnut oil to a clean large mixing bowl
  • 11. Combine
  • 12. Transfer vegetables to dressing
  • 13. Toss until combined
  • 14. Add salt & pepper and lemon to the dressing
  • 15. Serve
