A fresh and zingy raspberry granita, perfect as a palate cleanser or a light dessert. No churning needed. (Vegan, Gluten-Free)

  • Water icon
    Water

    700 g (about 3 cups)

  • Granulated sugar icon

    135 g (about ¾ cup)

  • Raspberries icon

    300 g (about 2 cups)

    METHOD


  • 1. Add water and granulated sugar to a clean saucepan
  • 2. Heat until dissolved
  • 3. Add raspberries and lime to a clean small bowl
  • 4. Transfer fruit to purée
  • 5. Cook until soft - 5 min
  • 6. Blend until smooth
  • 7. Transfer purée to baking pan
  • 8. Freeze - 1 hr
  • 9. Scrape
  • 10. Freeze until set - approx 1 hr
  • 11. Scrape
