Step preview

  1. Get a clean baking sheet
  2. Add chopped rack of lamb
  3. Rub in salt & pepper
  4. Set aside
  5. Get a clean small bowl
  6. Add lemon zest
  7. Add powdered cardamom pods
  8. Add ground cumin
  9. Add chili powder
  10. Add ground cinnamon
  11. Add ground nutmeg
  12. Add lime juice
  13. Add olive oil
  14. Mix together then set aside
  15. Get a clean food processor bowl
  16. Add mint
  17. Add pistachios
  18. Add cilantro
  19. Add olive oil
  20. Add finely chopped red onion
  21. Add lemon zest
  22. Chop coarsely then set aside
  23. Get a clean medium bowl
  24. Add juice of lemon
  25. Add greek yogurt
  26. Add finely chopped mint
  27. Add mayonnaise
  28. Stir together
  29. Refrigerate in fridge
  30. Prepare meat
  31. Transfer spices to meat
  32. Rub in thoroughly
  33. Drizzle with olive oil generously
  34. Set aside for approx 10min
  35. Pre-heat
  36. Prepare a large cast iron skillet
  37. Heat on medium heat
  38. Transfer meat to large cast iron skillet
  39. Cook each side for approx 2min until browned and turn off heat
  40. Spoon topping into baking sheet
  41. Cook for 5min
  42. Wrap with foil for approx 5min
  43. Serve immediately
