    METHOD


  • 1. Add rack of lamb to a clean baking sheet
  • 2. Rub in salt & pepper the meat
  • 3. Set aside
  • 4. Add lemon zest, cardamom pods, ground cumin, chili powder, ground cinnamon, nutmeg, lime juice and olive oil to a clean small bowl
  • 5. Mix together then set aside
  • 6. Add mint leaves, pistachios, cilantro, olive oil, red onion and lemon zest to a clean food processor bowl
  • 7. Chop coarsely then set aside
  • 8. Add lemon, greek yogurt, mint leaves and mayonnaise to a clean medium bowl
  • 9. Stir together
  • 10. Refrigerate in fridge
  • 11. Prepare meat
  • 12. Transfer spices to meat
  • 13. Rub in thoroughly
  • 14. Drizzle with olive oil generously
  • 15. Set aside - approx 10 min
  • 16. Pre-heat oven - 200°C
  • 17. Prepare a clean large cast iron skillet
  • 18. Heat - medium heat
  • 19. Transfer meat to large cast iron skillet
  • 20. Cook each side until browned and turn off heat - approx 2 min
  • 21. Spoon topping into baking sheet
  • 22. Bake - 5 min, 200°C
  • 23. Wrap with foil - approx 5 min
  • 24. Serve immediately
