This apple loaf cake is hearty, and quite versatile. It does require quite a few ingredients, but the method for preparing the cake batter is very simple. I’ve tested the recipe many times, and each with slight variations: soft dark brown sugar instead of light muscovado sugar, almond meal in place of the wheat germ, buttermilk in place of the milk and yogurt, all cranberries and no raisins, all raisins and no cranberries, half all-purpose flour and half whole wheat pastry flour. Each variation works well. So, if you haven’t any light muscovado sugar, or just can’t find any, don’t fret- use soft dark brown sugar instead. Don’t like raisins? Use cranberries. Don’t have yogurt? Use buttermilk.

Step preview

  1. Pre-heat
  2. Line a loaf pan with parchment paper
  3. Get a clean medium bowl
  4. Add rolled oats
  5. Add muscovado sugar
  6. Add ground cinnamon
  7. Add nutmeg
  8. Add ground cinnamon
  9. Add fine sea salt
  10. Mix briefly then set aside
  11. Get a clean large mixing bowl
  12. Add all purpose flour
  13. Add cane sugar
  14. Add toasted wheat germ
  15. Add almond flour
  16. Add sifted muscovado sugar
  17. Add ground cinnamon
  18. Add baking powder
  19. Add fine sea salt
  20. Add ground ginger
  21. Add ground nutmeg
  22. Add rolled oats
  23. Mix briefly then set aside
  24. Get a clean medium bowl
  25. Add greek yogurt
  26. Add room temperature milk
  27. Add melted unsalted butter
  28. Add egg
  29. Whisk together
  30. Transfer content of medium bowl to batter
  31. Mix in until just combined
  32. Add cored, finely chopped apple
  33. Add toasted, coarsely chopped walnuts
  34. Add golden raisins
  35. Add dried cranberries
  36. Stir briefly until well combined
  37. Transfer batter to loaf pan
  38. Sprinkle oat mixture with loaf pan evenly
  39. Bake for 50min
  40. Wrap with foil then set aside
  41. Let rest for approx 12h
  42. Serve
