After craving New York soft pretzels, I decided that it was time to re-create them at home, but with less salt. And I was quite pleased with the results. The color and the taste were spot-on. When it comes to making any bread dough, I do everything by hand. No machinery is needed for this soft pretzel recipe.

Step preview

  1. Get a clean small bowl
  2. Add active dried yeast
  3. Add sea salt
  4. Add granulated sugar
  5. Add warm water
  6. Whisk until sugar has dissolved
  7. Let rest for approx 8min until foamy
  8. Get a clean large mixing bowl
  9. Add all purpose flour
  10. Add bread flour
  11. Cut in softened salted butter
  12. Rub in until coarse crumbs form
  13. Pour yeast mixture into dough slowly
  14. Mix continuously until dough forms
  15. Transfer dough to lightly floured surface
  16. Knead for approx 5min
  17. Grease a medium bowl
  18. Transfer dough to medium bowl
  19. Cover with plastic wrap then set aside
  20. Let rise for approx 1h until doubled
  21. Cut
  22. Roll into a log
  23. Assemble
  24. Grease a baking sheet
  25. Transfer pretzels to baking sheet
  26. Let rise for 20min
  27. Pre-heat
  28. Fill a large saucepan with water
  29. Add baking soda
  30. Add granulated sugar
  31. Boil
  32. Transfer pretzels to large saucepan
  33. Boil each side for approx 30s until glossy then set aside
  34. Drain on round wire rack
  35. Transfer pretzels to baking sheet
  36. Get a clean small bowl
  37. Add water
  38. Add beaten egg and mix
  39. Brush generously
  40. Sprinkle with sea salt
  41. Bake pretzels for 15min until golden brown
  42. Let cool on round wire rack
