These creamy mashed potatoes are as delicious as a buttery mashed potato, without all of the butter. The addition of baking soda makes for unbelievable fluffiness– a nice addition, if you ask me. The original recipe calls for peeling and slicing the potatoes before cooking. I find that going the extra mile to dice the potatoes makes for a quicker cooking time and easier mashing in the end.

Step preview

  1. Get a clean saucepan
  2. Add peeled, sliced potato
  3. Add kosher salt
  4. Fill with water and cover
  5. Heat until boiling
  6. Simmer for 10min until tender
  7. Drain and reserve liquid
  8. Transfer potatoes to large mixing bowl
  9. Mash briefly with potato masher
  10. Get a clean saucepan
  11. Add buttermilk
  12. Heat gently on low heat until lukewarm
  13. Transfer milk mixture to large mixing bowl
  14. Add baking soda
  15. Mash completely with potato masher until smooth
  16. Mix in unsalted butter
  17. Season with salt & pepper
  18. Serve immediately
