  • Flaked coconut icon

  • Unsweetened shredded coconut icon

    Method

  • 1. Pre-heat oven - 175°C
  • 2. Add graham crackers, unsweetened shredded coconut, sugar, salt and butter to a clean large mixing bowl
  • 3. Mix well
  • 4. Transfer crumbs to pie dish
  • 5. Press the crust gently into the bottom of the pan
  • 6. Bake until toasted then set aside - 6 min, 175°C
  • 7. Add egg yolk and sugar to a clean large mixing bowl
  • 8. Mix well
  • 9. Add lime juice, condensed milk and salt
  • 10. Mix thoroughly until well combined
  • 11. Transfer filling to pie dish
  • 12. Bake until just set - 17 min, 175°C
  • 13. Let cool on round wire rack
  • 14. Serve
