Method
1. Pre-heat oven - 175°C
2. Add graham crackers, unsweetened shredded coconut, sugar, salt and butter to a clean large mixing bowl
3. Mix well
4. Transfer crumbs to pie dish
5. Press the crust gently into the bottom of the pan
6. Bake until toasted then set aside - 6 min, 175°C
7. Add egg yolk and sugar to a clean large mixing bowl
8. Mix well
9. Add lime juice, condensed milk and salt
10. Mix thoroughly until well combined
11. Transfer filling to pie dish
12. Bake until just set - 17 min, 175°C
13. Let cool on round wire rack
14. Serve
