If I was to name one recipe that is ideal food therapy, it would be this rich tomato & Italian meatballs pasta. There is something extremely relaxing about rolling the meat into little balls and plopping them into a boiling, rich, tomato sauce. I rely solely on the heat of the sauce to cook and infuse the balls with flavour and I love to serve the dish on a big platter with serving spoons, so that people can dig in at the table. Step preview

  1. Get a clean large mixing bowl
  2. Add ground pork
  3. Add ground beef
  4. Add breadcrumbs
  5. Add peeled, minced garlic clove
  6. Add dijon mustard
  7. Add ketchup
  8. Add dried oregano
  9. Add sea salt
  10. Add freshly ground black pepper
  11. Mix thoroughly until combined
  12. Roll into balls
  13. Transfer meat to baking sheet
  14. Chill in fridge until firm and continue
  15. Get a clean large saucepan
  16. Add olive oil
  17. Add peeled, finely chopped onion
  18. Fry for approx 3min
  19. Add peeled, finely chopped garlic clove
  20. Fry for approx 1min
  21. Add chopped canned tomatoes
  22. Add hot pepper sauce
  23. Add dried oregano
  24. Add red wine
  25. Heat until boiling
  26. Simmer for 15min and continue
  27. Season
  28. Transfer meat to sauce
  29. Simmer for 15min until tender
  30. Fill a stockpot with water
  31. Boil
  32. Add linguine
  33. Cook for approx 8min until al dente
  34. Strain
  35. Assemble
