Method
1. Add active dried yeast, sea salt, granulated sugar and water to a clean small bowl
2. Stir until sugar has dissolved
3. Leave until foamy - 8 min
4. Add bread flour, all purpose flour and salted butter to a clean large mixing bowl
5. Rub in until coarse crumbs form
6. Pour yeast mixture into dough slowly
7. Stir until dough forms
8. Transfer dough to lightly floured surface
9. Knead - 5 min
10. Grease a clean large mixing bowl
11. Transfer dough to large mixing bowl
12. Cover with plastic wrap and let rise - 1 hr
13. Roll into strips
14. Let rise - 20 min
15. Pre-heat oven - 250°C
16. Fill a clean stockpot with water
17. Add granulated sugar and baking soda to the stockpot
18. Heat until boiling
19. Add pretzels
20. Boil each side until glossy then set aside - approx 30 sec
21. Drain pretzels on round wire rack then set aside
22. Grease a clean baking sheet
23. Transfer pretzels to baking sheet
24. Bake until golden brown - 15 min, 250°C
25. Add granulated sugar, ground cinnamon and salt to a clean small bowl
26. Mix then set aside
27. Add coffee to a clean small bowl
28. Mix in milk to the glaze
29. Mix in powdered sugar to the glaze slowly
30. Melt butter a clean heatproof bowl
31. Glaze baking sheet
32. Serve immediately
