Step preview

  1. Get a clean small bowl
  2. Add active dried yeast
  3. Add sea salt
  4. Add granulated sugar
  5. Add warm water
  6. Stir until sugar has dissolved
  7. Leave until foamy - 8 min
  8. Get a clean large mixing bowl
  9. Add bread flour
  10. Add all purpose flour
  11. Add salted butter
  12. Rub in until coarse crumbs form
  13. Pour yeast mixture into dough slowly
  14. Stir until dough forms
  15. Transfer dough to lightly floured surface
  16. Knead - 5 min
  17. Grease a clean large mixing bowl
  18. Transfer dough to large mixing bowl
  19. Cover with plastic wrap and let rise - 1 hr
  20. Roll into strips
  21. Let rise - 20 min
  22. Pre-heat - 250°C
  23. Fill a clean stockpot with water
  24. Add granulated sugar
  25. Add baking soda
  26. Heat until boiling
  27. Add pretzels
  28. Boil each side until glossy then set aside - approx 30 sec
  29. Drain pretzels on round wire rack then set aside
  30. Grease a clean baking sheet
  31. Transfer pretzels to baking sheet
  32. Bake until golden brown - 15 min, 250°C
  33. Get a clean small bowl
  34. Add granulated sugar
  35. Add ground cinnamon
  36. Add salt
  37. Mix then set aside
  38. Get a clean small bowl
  39. Add strong coffee
  40. Mix in milk
  41. Mix in powdered sugar slowly
  42. Get a clean heatproof bowl
  43. Melt butter
  44. Glaze baking sheet
  45. Serve immediately
