Oven roasted tomatoes are so delicious that we don't buy canned tomatoes unless absolutely necessary. Aside from the taste, doing them ourselves is also much more economical.
Throughout the summer, tomatoes come on the scene and are much cheaper than in the winter.
This is the time that I stock up, roast and freeze them. I usually portion them out in the same sizes as the cans I would buy in the grocery store.
These lovely, flavourful tomatoes get used in any recipe that calls for diced or crushed tomatoes.
If you have never tried it yourself, give it a go. You will be glad you did.

2. Get a clean ceramic baking dish
3. Add olive oil
4. Add chopped tomato
5. Add olive oil
6. Add fresh basil
7. Add garlic clove
8. Add kosher salt
9. Add ground black pepper
10. Cook for 30 minutes
12. Cook for 1 hour
13. Cook for 1 hour
14. Remove and let cool
15. Transfer tomatoes to food processor bowl
16. Chop slightly
17. Transfer tomatoes to large resealable plastic bag
