Method
1. Pre-heat oven - 200°C
2. Grease an oven-proof baking dish
3. Combine the oil, salt, pepper, oregano, garlic, and lemon zest into a small bowl and stir
4. In a separate bowl, combine potatoes, onions and chicken
5. Add oil mixture to the chicken mixture
6. Mix this up with your hands so that all the bits get coated
7. Transfer chicken to ceramic baking dish
8. Season with salt and pepper
9. Bake - 30 min, 200°C, middle rack
10. When the chicken reaches 165°F (74°C) and the potatoes are tender, turn on the broiler for 2-3 minutes to brown and crisp the chicken skin
11. Remove from oven and squeeze lemon over the top of the entire dish
12. Serve and enjoy
