Lemon garlic chicken with potatoes is an excellent option when you do not want to fuss in the kitchen. One pan is all you need.

  • Olive oil icon

    Method

  • 1. Pre-heat oven - 200°C
  • 2. Grease an oven-proof baking dish
  • 3. Combine the oil, salt, pepper, oregano, garlic, and lemon zest into a small bowl and stir
  • 4. In a separate bowl, combine potatoes, onions and chicken
  • 5. Add oil mixture to the chicken mixture
  • 6. Mix this up with your hands so that all the bits get coated
  • 7. Transfer chicken to ceramic baking dish
  • 8. Season with salt and pepper
  • 9. Bake - 30 min, 200°C, middle rack
  • 10. When the chicken reaches 165°F (74°C) and the potatoes are tender, turn on the broiler for 2-3 minutes to brown and crisp the chicken skin
  • 11. Remove from oven and squeeze lemon over the top of the entire dish
  • 12. Serve and enjoy
