Where keshi yena gets much of its taste from is in the Caribbean-inspired spiced filling. Normally, you might have a filling that features some meats or shredded chicken (though in ours, you’ll see we went vegetarian), but really anything you have in the kitchen can work. That type of all-encompassing versatility is one of the real positives of this cheese casserole dish.

Step preview

  1. Heat a saucepan
  2. Add olive oil
  3. Heat on medium heat
  4. Add finely sliced onion
  5. Add minced garlic clove
  6. Add minced green bell pepper
  7. Add minced fresh chili
  8. Cook for approx 3min until softened
  9. Add diced fresh parsley
  10. Add capers
  11. Add raisins
  12. Stir well
  13. Mix in coarsely chopped tomato
  14. Mix in tomato paste
  15. Mix well
  16. Cook for approx 2min
  17. Add soy sauce
  18. Add ketchup
  19. Mix in until well combined
  20. Cook for approx 3min and turn off heat
  21. Let cool
  22. Transfer vegetables to medium bowl
  23. Add beaten egg
  24. Mix in
  25. Pre-heat
  26. Prepare 6 small glass bowls
  27. Grease
  28. Line with shaved old gouda cheese thoroughly
  29. Transfer filling to 6 cheese mixture
  30. Cover carefully
  31. Bake for approx 45min until golden brown
  32. Let cool to cooling rack
  33. Transfer 6 cheese mixture to serving plate
  34. Serve
  35. Serve sliced rustic french bread
