Spinach and artichoke dip is one of my favorite appetizers. All of that gooey, melty cheese with the veggies cutting through is just snacking perfection! I decided to put a spin on it and use it for dinner with my favorite Italian flair. This spinach artichoke dip pasta could not have been easier or quicker to make!

Step preview

  1. Fill a stockpot with water
  2. Add salt
  3. Boil
  4. Add pasta
  5. Cook for approx 8min until al dente and strain
  6. Place a medium cast iron skillet on drop
  7. Add cream cheese
  8. Add herbed goat cheese
  9. Add milk
  10. Add garlic powder
  11. Add onion granules
  12. Add salt
  13. Add black pepper
  14. Add crushed red pepper flakes
  15. Melt until creamy while stirring occasionally
  16. Add beer
  17. Add finely chopped baby spinach
  18. Add coarsely chopped artichoke hearts
  19. Simmer gently for approx 2min
  20. Add pasta to sauce
  21. Add shaved parmesan cheese
  22. Stir thoroughly and turn off heat
  23. Sprinkle with chopped fresh basil
